Make syrup of:
1 pint water
3 1/2 lbs. sugar
1/2 tsp. oil of cinnamon
1/2 tsp. oil of cloves
1 pint vinegar (white)
pinch of salt
Pour syrup over the rind. Next morning pour it off and bring it to a boil and pour over rind. Do this two more mornings and then heat both syrup and watermelon together and bottle.
These come out very light colored and crisp.
